Baby Corn Curry

Can we not like any curry recipe..? No right? So here is one of our favorite and we hope you enjoy it too.
If you cannot find fresh baby corn anywhere, check for canned baby corn in Asian store.
Baby Corn Curry
Vegan | Gluten-Free | Sugar-Free
Prep Time : 15 mins
Cook Time : 30 mins
Total Time : 45 mins
Yield : 2 - 3 servings
1 cup Baby Corn
2 Roma Tomatoes
1/4 cup Cashew Paste
1/2 tsp Salt
1/2 tsp Chili Powder
1/2 tsp Coriander Powder
1/2 tsp Garam Masala
1/4 cup chopped Cilantro
In a pan add chopped onion, tomato and saute for 5 mins on medium flame. Turn off the flame, let cool down and blend the mix to puree.
In a separate pan, add 1 tsp of oil and saute chopped baby corn for 5-6 mins or till the raw smell is gone.
Keep the prepared baby corn on side and lets prepare the sauce.
In a sauce pan, add 3 tsp of oil, chili powder, garam masala, coriander powder and saute on medium flame for 3 mins.
Now add prepared puree and cook for 5 mins on medium flame.
Add 1/4 cup water, prepared baby corn, cashew paste, chopped cilantro and cook on low-medium flame for 15 mins. Stir in between to avoid any burn.
Turn of the flame and serve with rice or flat bread!
VARIATION : Add tofu or cauliflower or potato instead of baby corn.
STORAGE : Store in an air-tight container in refrigerator for 3-4 days.
