Spicy Cauliflower Bean Bowl
Recipe : Spicy Cauliflower Bean Bowl

Servings : 2 Bowls
1/2 head of Cauliflower
1 cup Black Beans
1 cup cooked Brown Rice ( or any variety rice )
1 cup Kale
1/2 cup Plant Yogurt
1 tbsp Ginger Garlic Paste
1 tsp Chilli Powder ( or paprika )
1/2 tsp Salt
1/2 tsp Turmeric ( optional )
In a bowl add yogurt, ginger garlic paste, salt, chilli powder, turmeric and mix well. Add chopped cauliflower and let sit for 1 hr if possible or use immediately.
Bake the cauliflower mixture at 350 F for 20-30 mins with mixing in between or pan roast with 1 tsp of cooking oil till you see them crispy.
In mean time prepare rice and beans. Canned beans work too.
Remove the stem of the kale and massage it to improve taste and digestion.
Once cauliflower is roasted and crispy, arrange the bowl.
Add brown rice, black beans, roasted cauliflower, massaged kale and cilantro to the bowl and enjoy!
If you want, you can flavor the black beans with garlic and salt before adding to the bowl. Just use 1 tsp of cooking oil in a pan and saute chopped garlic, add cooked beans, pinch of salt and cook on low for 2 mins. And you have flavored beans.
Try not using any flavored yogurt in this recipe. Add less chilli powder if you don't want it spicy.
