Vegan Carrot Cake

Vegan Carrot Cake


Yield : 2, 6-inch cake pans

Time: 40 mins


  • 2 & 1/2 cup All-purpose Flour

  • 1 tbsp Baking Powder

  • 1 tsp Baking Soda

  • 3 tsp Cinnamon

  • 1 tsp Salt

  • 1 Cup Sugar

  • 1 Cup Milk

  • 2 tsp Vanilla Essence

  • 1/2 Coconut Oil

  • 3 Cups shredded Carrot

  • 1/4 cup Walnuts

  • 1/4 cup Almonds


  • Add all wet ingredients in a large bowl and mix well, add dry ingredients to same bowl and mix till combined, don't over mix.

  • Add shredded carrot and nuts to the cake batter and mix till combined.

  • Transfer batter equally to parchment lined cake pans and bake at 350F for 30 mins.

  • Let both cakes cool, in meantime prepare frosting or use store bought frosting.

  • Use 1/2 cup of Applesauce with 1/2 cup of Coconut sugar in place of Sugar.

  • Use Spelt flour or Buckwheat flour in place of normal flour for gluten-free version.
