Citrus Beet Salad

It is always recommended to have salad with something filling than just having the raw vegetables. This Citrus Beet salad can go well with cooked black beans & avocado or flavored quinoa/rice. Adding salad to the main dish is the good sneaky way to have daily dose of veggies!

Citrus Beet salad

Yield : 2 servings
1/2 cup grated Carrot
1/4 cup grated Beetroot
1/2 cup grated Apple
3 tbsp Orange Juice
1 tbsp Lime/Lemon Juice
1/4 cup Raisins/cranberries
Walnuts ( as needed )
Add grated carrot, beetroot, apple, orange juice, lemon juice, salt, pepper and mix everything well. Keep it aside for 10 mins.
Add walnuts and cranberries before serve!
VARIATION : Add any greens of choice. Use 1 crushed garlic along with orange and lemon juice if you enjoy the flavor of it.
STORAGE : Store in an air-tight container in refrigerator for 2 days.
