Crispy Corn

Vegan | Snack

Yield : 3-4 servings


  • 2 cups Boiled Sweet Corn

  • 3 tbsp Corn Flour

  • 2 tbsp Rice Flour

  • 1 tsp Red Chillies Powder

  • 1 tsp Chat Masala

  • 1/2 tsp Salt ( or as needed )

  • 1 tbsp Dried Curry Leaves powder

  • 1/4 cup chopped Onion

  • 3 tbsp roasted Peanuts

  • 2 tbsp roasted Almonds

  • 3 tbsp chopped Green Onion

  • 1 tbsp Dried Cranberries

  • 2 tbsp Lime Juice


  • In a dry bowl, add boiled corn kernels ( or canned corn ), corn flour, rice flour and mix well till all kernels are covered with flour.

  • Deep fry coated kernels in oil for 2 mins or bake in Oven at 350 F for 20-30 mins. 

  • Add fried or baked kernels in a large mixing bowl and add red chillies powder, chat masala, curry powder, salt and mix well till kernels are coated in spices.

  • Add chopped onions, green onions, roasted nuts & cranberries, lime juice to prepared corn kernels before serving.

  • Serve when corn kernels are still crisp!


  • Stay far from oil if deep frying to avoid burn if any corn pops.

  • If serving is late and kernels turn soft before serve, just fry for 2 more minutes or bake for 10 mins before adding onions and nuts.

  • Chat Masala can be replaced with dry mango powder. ( both can be found in any Indian grocers )
