Sweet Corn Bites (savory)

Bored of using sweet corn in same old way..? Try adding some spice to the sweet corn and get amazed by the combination. Spice levels can be moderate to high, depending on how much you add. 

Let's see how to make them!

Sweet Corn Bites

  • Vegan | Nut - Free | Sugar - Free

Prep Time : 15 mins

Cook Time : 25 - 30 mins

Total Time : 45 mins

Yield : 10 Bites

INGREDIENTS

1/2 Onion (or) 1/4 cup Onion

1 cup Sweet corn Kennels ( boiled or canned )

1/4 cup Cilantro

2 tbsp Chickpea Flour

3 tbsp Rice Flour

Chilli Powder / Paprika

1 Jalapeno or Hot Peppers ( optional )

Salt

Chat Masala ( optional )

Curry Leaves ( optional )

PROCESS

  • Finely chop onions, cilantro, curry leaves, Jalapeno or hot peppers. In a food processor or blender add boiled sweet corn kennels and coarse blend, not into a paste.

  • In a bowl, add chopped onion, coarse blended sweet corn kennels, chickpea flour, rice flour, cilantro, jalapeno, salt, chilli powder, chat masala. Mix everything well by hand, add 1 tbsp of cooking oil if needed.

  • Take 2 tbsp of mix and mold to bite size balls by hand. If the mix is runny, add 2 tbsp more chickpea flour.

  • Place the balls on a baking tray and bake at 350 F for 20 - 35 mins. Turn balls in between for even bake.

  • Can deep fry in cooking oil too. 

  • Serve warm by themselves or with tomato ketchup/salsa!!

VARIATION : Add other chopped veggies like carrot, zucchini, cauliflower, cabbage along with corn. Can use 1 tbsp of corn starch for extra crisp.

STORAGE : Better served immediately. If not, store in an air-tight container in refrigerator for 2-3 days, microwave for 2 mins or bake for 5 mins before serve.
