Double Chocolate Bars

  • Vegan | Sugar - Free | Gluten - Free

Yield : 6 bars


1/2 cup Walnuts

1 cup Dates or Raisins

1 tbsp Almond Butter ( or Peanut Butter )

1/4 cup Chocolate chips ( dark )

1 tsp Vanilla Extract

Pinch of Salt


  • In a food processor, add walnuts, raisins, almond butter, vanilla extract, salt and blend on high for 5 mins. 

  • Blend till the mixture is moldable.

  • Place parchment paper flat on counter top and transfer the blended mix on it. Press with hand or rolling pan to get square shape. ( I used my 3 by 6 mini loaf pan to mold the mixture to final rectangle shape. To fit in that loaf pan, I molded the mixture to 6 by 6 square on the parchment paper. So based on the loaf pan or any other mold you are using, your square dimensions may vary ).

  • Once you get the square shape, refrigerate for 10 mins.

  • In meantime, line the loaf pan with parchment paper ( this makes easy to get the final product out of loaf pan ).

  • Now the cut the square into half and place one half into the loaf pan. Press lightly with hand to get even surface.

  • Now melt chocolate chips and add a thin layer on top of the first layer ( of the loaf pan ).

  • Place the loaf pan in refrigerator for 15 mins.

  • Now add the second half of the square to the loaf pan (i.e., on the top of the chocolate layer ).

  • Press lightly with hand to get even surface. Now add thick layer of melted chocolate on the third layer.

  • Sprinkle pinch of salt and crushed walnuts on top of the chocolate layer ( i.e., the final layer ).

  • Refrigerate for 15 mins.

  • Now remove the final rectangle carefully out of loaf pan with the help of parchment paper.

  • Cut into smaller rectangle or squares and serve!

* Basically, you just add layers of blended mix and melted chocolate to the loaf pan. For any shape of pan you use, the process is similar.

VARIATION : Add any nuts of your choice instead of walnuts. Can add as many layers of chocolate as you wish.

STORAGE : Store in an air-tight container in the refrigerator for a week or in freezer for a month.
