Banana Pancakes with Coconut Yogurt
Recipe : Banana Pancakes with Coconut Yogurt
Servings : 6-7 Pancakes
Vegan | Refined Sugar-Free
1 cup Spelt Flour
1/4 cup Palm Sugar
1/2 cup Oat Milk ( any plant milk )
1 tsp Baking Powder
1 tsp Baking Soda
1 tbsp Coconut Oil
1/4 cup Coconut Yogurt ( any plant yogurt )
Mash peeled bananas in a bowl and add oat milk. Mix well and keep aside.
In a separate bowl, add spelt flour, sugar, baking soda and baking powder and mix together.
Now add wet ingredients to the dry and mix together. The batter need to be in the consistency of cake batter, if the batter is too thick, add more milk. If the batter is runny, just add some more flour/sugar.
Keep the batter aside for 10-15 mins.
Heat non-stick pan, add coconut oil to grease the pan. Coconut and banana are always the best combination, but if you like any other cooking oil, feel free to use it.
Once the pan is hot, use 1/4 cup of batter and spread in the shape of a pancake ( I hope you got what I mean ).
Keep the flame on medium and once you see small bubbles on the top of the pancake, flip it to the other side. Make sure to cook evenly on both sides.
Keep going till the batter is done.
Serve with maple syrup or coconut yogurt like I did. For colorful yogurt, I used Beet root powder and Alkalising blend from Unicorn Superfoods. For 2 tbsps of yogurt I used 1/2 tsp of superfoods powder.
Spelt Flour Fact
Spelt is not completely gluten-free, it has different type of molecule. But it has more fiber than wheat and that fiber helps in digesting the gluten.
So if you are gluten intolerant, we highly recommend using some gluten free flour like Almond flour, Buckwheat flour instead of Spelt flour for this recipe!
