Chocolate Cupcakes

Vegan | Gluten-Free

Yield : 9 mini Cupcakes

Time : 30 mins


  • 1 cup Spelt Flour

  • 1/4 cup Cacao Powder

  • 1/2 cup Sugar

  • 1/4 cup Flaxseed Meal

  • 1 tsp Salt

  • 1 tsp Baking Powder

  • 3/4 - 1 cup Plant Milk

  • 1 tbsp Coconut Oil


  • 2 cups Powdered Sugar

  • 1/4 cup Soft Coconut Oil

  • 1/4 cup Cacao Powder

  • 1 tsp Vanila Extract

  • 3-4 tbsp Plant Milk 


  • Add all dry ingredients in a bowl and mix, add all wet ingredients in a separate bowl and mix both wet and dry ingredients. Do not over mix, just mix till well combined.

  • Transfer the batter to cupcake liners and bake at 350 F for 15 mins. ( if using normal size cupcake tray instead of mini, bake for 20 mins )

  • In mean time prepare the frosting, in a large mixing bowl add powdered sugar, cacao powder, coconut oil and mix roughly. Add plant milk, vanilla extract and whisk on high for 5 mins. You have the frosting ready.

  • Once the cupcakes are cool enough, decorate cupcakes as you like with prepared frosting.

  • Serve with coffee!
