Granola Cups

You may ask me 'parfait is normally easy, so why all this work of making cups?' Then my answer would be ' you need some fun every now and then! ' And also this cups are great presenters, next time when you host a breakfast party or any such that needs parfaits, make this cups and get wow's! The benefit I like most about these cups is...I don't need to wash the parfait cups or use plastic! 

If you are someone who don't like parfaits, I would highly recommend using flavored yogurt in the place of regular one. I mostly use vanilla soy yogurt, but you can use any flavor you love, like strawberry, coconut etc..And also in the beginning try adding fruits or nuts you like the most, it can be just bananas or just apples, don't take the stress of making it look good with colorful fruits and throw them if you don't like.

Recipe : Granola Cups

Servings : 6 cups

Vegan | Refined Sugar-Free | Gluten-Free

Ingredients : 

1/2 cup Rolled Oats

1/4 cup Pumpkin Seeds

1/4 cup Chopped Almonds

1/2 Ripe Banana

1/4 Cup Soy Yogurt ( or of choice )

2 Tbsp Maple Syrup ( or sweetener of choice )

1/2 tsp Cinnamon Powder

Chia Seeds ( optional )

Cacao Powder ( optional )

Process :

  • Add mashed banana, maple syrup, oats, pumpkin seeds, almonds and cinnamon powder to a bowl and well together.

  • We need the consistency of mix not too dry or wet, it should be moldable by hand.

  • Coat the muffin pan with coconut oil and press the mixture as shown in the picture below. Leave gap in the center and make in the shape of a cup.

  • Preheat the oven to 350 F and bake for 15-20 mins​. Check in between to not over burn.

  • Let cool completely and remove the cups from tray. Add yogurt and fruits of your choice on top. I added strawberries, banana and chia seeds.

  • To drizzle chocolate on top, I used mixture of maple syrup and cacao powder. You can use either melted dark chocolate or mixture of coconut oil and cacao powder.

  • Recommended to use within a day or two!
