Prep Time : 20 mins
Cook Time : 25 mins
Total Time : 45 mins
Yield : 4 - 5 cupcakes
1/2 cup All purpose Flour or Gluten-free Flour
1/2 cup Sugar
1/2 tsp Baking Powder
1/4 tsp Baking Soda
1/4 cup Coconut Oil
1/2 cup Coconut Milk
2 tbsp Lime juice ( add more if needed )
1 tbsp Lime Zest
1 cup Margarine
1 cup Icing Sugar
1 tsp lime juice ( optional )
Mix dry ingredients and wet ingredients in separate bowls and mix together gradually.
In a muffin pan/cupcake pan, place cupcake liners and add mixture to 3/4 of cupcake liners.
Bake at 350F for 20 mins. Let cool down completely to add frosting.
To prepare frosting, whisk margarine in medium speed for about 5 mins and add sugar gradually.
Place in refrigerator for 20 mins before pipping.
Add frosting in your style and serve!
VARIATION : Use lemons instead of Limes. Use light green food color if needed.
STORAGE : Store in refrigerator for 2-3 days.
