Mango Coconut Tart

Yield : 4 tarts


for base,

1 cup All Purpose Flour

1/2 cup Icing Sugar

1/2 cup Margarine

1 tbsp Water

for filling,

1 cup Coconut Milk

1/2 cup Sugar or Maple Syrup

1/2 tsp Vanilla Extract

2 tsp Agar Agar


  • For base, add all ingredients in a bowl and mix by hand to form dough, add more water if needed. Let sit dough in refrigerator for 20 mins.

  • After 20 mins, press dough by hand for a good 5 mins and start rolling to pan size patties. Place dough patties on tart pans and bake at 350 F for 12 mins. Or press dough to tart pan by hand.

  • For filling, add coconut milk, sugar, vanilla extract in a sauce pan and bring to boil. Add agar agar, mix well and turn off the flame.

  • When base and filling is ready, add filling to tart base and place in refrigerator for 20 mins or till filling is set.

  • Add fresh chopped mango on top and serve!

VARIATION : Add mango puree to coconut milk filling for extra mango flavor. Use oat flour or gluten-free in place of all-purpose flour.

STORAGE : Store in refrigerator for 3-4 days.
