Mixed Herb Sweet Potato Fries

Vegan

Yield : 3-4 servings

Time : 45 mins

INGREDIENTS

  • 3 large Sweet Potatoes

  • 1/2 tsp Salt

  • 1/2 tsp Chili Powder

  • 1/4 tsp ground Pepper

  • 1/4 cup Mixed Herbs ( cilantro, rosemary, thyme)

  • 3 Garlic Cloves

  • 3 tbsp Olive Oil

PROCESS

  • Wash sweet potatoes and cut to equal size thin wedges. ( peel skin of potatoes if not organic )

  • Place on parchment lined baking tray. Drizzle olive oil, salt, chili powder and mix together.

  • Bake at 350 F for 20 mins.

  • Remove tray from oven, add herbs, pepper, garlic and mix once. Bake again at 350 F for 20 more mins.

  • Serve hot with vegan mayonnaise or tomato ketchup!

Vegetarian Option:

  • Drizzle 2 tbsp of melted butter along with Olive oil.
