Mixed Nut Muffins

I am not saying this because I made this recipe but trust me this one is a bomb. You should try it to believe it! And I also know this muffins are not for regular breakfast or snack as we all know how expensive nuts can be. But, they do make a good treat once in a while and also we know the benefits of nuts.

Taking about how expensive nuts can be, there are ways you can save money.

  • Try getting nuts from wholesale shops. We have the choice to get how much we want and that makes it much cheaper.

  • There is no difference between whole nuts and chopped nuts. Whole almonds and flaked almonds are similar but whole almonds are costlier than flaked almonds. We don't need whole nuts for most of the recipes. They may be used for presentation.

  • Nuts cost differently in different areas or countries, if you don't find a wholesale nuts store near you, try online. There are many online marketplaces that provide nuts in wholesale, eg : Nuts.com, Nuts and More


Servings : 6 Muffins

Vegan | Refined-Sugar Free

Ingredients :

1 Cup of Mixed Nuts ( walnuts, cashews, hazelnuts )

1/4 Cup Almond Flour ( if no flour, check process below )

1/4 Cup Palm Sugar

2 Tbsp Flaxseed meal ( or chia seeds )

2 Tbsp Coconut Oil

1 Ripe Banana

1 tsp Cinnanom Powder

1/2 tsp Salt ( add as needed )

1 Tbsp Plant Milk ( almond or soy )

1/4 Cup Choco chips or Carob chips


Process :

  • Dry roast all the nuts for 10 mins either in oven or in pan. Make sure not to burn them. 

  • Once they are roasted, let them cool completely and grind to fine powder, its okay if the powder is not very fine.

  • Now in a bowl add the prepared mixed nut powder, almond flour, sugar, flaxseed meal, cinnamon and salt. If almond flour is not available, roast 1/4 cup of almonds along with mixed nuts and grind them to fine powder.

  • Now in a separate bowl, add peeled banana and smash it with a fork till you get semi-liquid consistency. Add sugar and coconut oil to the smashed banana and mix well. Don't add milk at this point.

  • Mix the dry ingredients with the wet and mix to get the consistency of cake batter. Add 1 tbsp of milk if needed, don't add too much at a time. Add chocolate chips or carob chips if needed.

  • Preheat the oven to 350 F and prepare the muffin tray. Make sure to coat the muffin tray with coconut oil or else the batter may stick to the pan. I would recommend coating coconut oil even to the muffin liners.

  • Now bake your batter for 20-25 mins at 350 F, make sure to check in between with a fork or knife if the muffins are cooked.

  • Take the tray out, let cool down completely, and they are ready to serve!

* If no flaxseed meal or chia seeds are available, use 1/4 cup of plant yogurt. If not just banana can work.
