Peanut Bars

This 2-ingredient super food can be your next favorite snack. We used jaggery in this recipe, if you cannot find it, use brown sugar.

Jaggery : When sugar cane is boiled we get jaggery.

Brown Sugar : Includes some other process after boiling.

So jaggery is less processed and has 5 times more minerals like iron and potassium than brown sugar, 50 time more than refined white sugar.


It is always recommended to have any of these sugars in moderation as they contain more calories. But we all do crave for some sweetness once in a while and this recipe covers those times.

Do you know, peanuts are not actually nuts, even though the name says nut. They actually come under legume family! 

Peanut Bars

  • Vegan | Refined Sugar-Free

Prep Time : 10 mins

Cook Time : 15-20 mins

Total Time : 30 mins

Yield : 6 - 7 bars


1 cup Raw Peanuts

1 cup Jaggery or Brown Sugar

1 tbsp water


  • Dry pan roast peanuts on medium flame. Keep stirring with spatula as we don't want the peanuts to turn dark, they just need to be roasted to light brown color.

  • We recommend pan roast over oven as we want even roast on all sides.

  • Let the peanuts cool and now rub in between your hands to remove the skin of the peanuts. Make sure to remove all the skin as it may taste bitter latter.

  • Now in a pan add jaggery, 1 tbsp of water and melt it on low-medium flame. Keep stirring. Do not add more water.

  • Keep stirring for 4-5 mins and check if the syrup has two string consistency i.e., when you check the consistency of the syrup in between your thumb and forefinger, you have to see two strings forming.

  • Syrup need to be in proper two string consistency for the bars to hold. Now add the peanuts to the syrup, turn flame to low and mix everything well. 

  • When you see the mixture thickening, transfer the mix to a greased ( with coconut oil ) plate or baking tray. Make it even with the spatula and let dry for 30-60 mins.

  • When dried, cut into bars! 

VARIATION : Can use any other nuts like cashews and almonds. Use a pinch of cardamom powder for extra flavor. Can make into bite size balls instead of bars, when the mixture is warm enough to handle with hand, take 1 tbsp of mix and mold to balls with hand, but make sure the mixture is not completely cold before molding.

STORAGE : Store in an air-tight container for up to 2 months.
