Peanut Cilantro Rice

Peanut Cilantro Rice

Vegan

Yield : 2-3 servings

Time : 35 mins

INGREDIENTS

1 cup uncooked Rice ( long grain )

1/4 cup Peanuts

2 tbsp Cooking Oil ( neutral flavor )

1/2 tsp Cumin Seeds

2-3 Green Hot Peppers

1/4 cup chopped Cilantro

1/2 tsp Salt

3-4 Curry Leaves ( optional )

1/2 tsp Mustard Seeds ( optional )

PREPARATION

  • In a medium sized sauce pan or cooking pot add 2 & 1/4 cup of water, 1 cup washed uncooked rice and bring to boil. Cover with lid and cook for 15 mins on medium flame OR till all water is gone and rice looks fluffy and soft. 

  • If you love rice but cannot cook it properly, invest in Instapot or Rice Cooker. Almost all Asians have it at home and very small percent cooks rice in conventional way.

  • Keep cooked rice aside and let it cool. Transfer to a large plate or tray to cool fast.

PROCESS

  • In a large frying pan, add oil, when oil is hot add cumin seeds, mustard seeds, peanuts, cut hot peppers, curry leaves and fry till peanuts turn light brown in color ( do not burn peanuts ).

  • Reduce flame to medium-low, add finely chopped cilantro, salt and fry for a minute ( careful not to burn cilantro as it cooks fast )

  • Keep in low flame and add cooked, cooled rice. Mix everything well, add more salt or pepper if needed. 

  • Turn off flame and serve hot!

  • Do not over fry rice as it becomes hard.

What to Serve with..?

VARIATIONS

  • Use any other kind of rice like brown rice, jasmine rice, short grain rice.

  • Can use quinoa or millets instead of rice for much healthier option.
