Raspberry Chocolate Bites

Vegan | Gluten - Free

Yield : 6 - 7 bites


for raspberry center,

1/4 cup Raspberries ( fresh or frozen )

2 tbsp Maple syrup

1 tbsp lime juice

1 tsp Agar Agar

for second layer.

1/4 cup Oats

1/4 cup Coconut Flour ( gluten-free )

2 tbsp Cashew nuts

1/4 cup Maple syrup or Sugar

1/2 tsp Vanilla Extract

Pinch of Salt

for chocolate layer,

1/2 cup Dark Chocolate chips

Pinch of Salt


  • First prepare raspberry layer, add raspberries, maple syrup, lime juice in a blender and coarse blend. Transfer the mix to a sauce pan and bring to boil. Add agar agar, mix well and turn off the heat.

  • Transfer raspberry mix to a plate or baking tray and place in refrigerator for 25 mins or till it thickens.

  • In mean time prepare the second layer, add all the ingredients for second layer in a food processor and coarse blend. Blend till the mixture is moldable by hand.

  • When raspberry mix is ready, using second layer mix prepare small patties by hand, place raspberry mix in center and mold in the shape of ball by hand.

  • Repeat till the mix is done.

  • Now melt dark chocolate chips, add pinch of salt and immense prepared balls in chocolate dip. 

  • Place each ball on parchment lined plate or baking tray and place in refrigerator for 20 mins.

  • Serve with chopped nuts or as it is!

VARIATION : Add desired nuts instead of cashew nuts. Use almond meal in place of coconut flour.

STORAGE : Wrap each ball in parchment paper and place in refrigerator for 5 days or in freezer for a month.
