Wanted to try something other than mango to make lassi and felt raspberries are perfect option! raspberries go very well with the sweetness of the maple syrup and soy yogurt.
If you can find, I highly recommend using soy yogurt over any other yogurt and maple syrup over other sweeteners. Lets see the recipe below!
Vegan | Refined Sugar-Free | Gluten-Free
Prep Time : 10 mins
Cook Time : 5 mins
Total Time : 15 mins
Yield : 3 servings
1/2 cup Soy Yogurt ( or any plant yogurt )
1/4 cup Almond Milk ( or any plant milk )
1-2 tbsp Maple Syrup
1/2 tsp Vanilla Extract
1/4 - 1/2 cup Raspberries ( fresh or frozen )
1/4 cup Cherries ( optional )
Add all the ingredients to a blender and blend on high for 5 mins.
VARIATION : To get the swirls as shown in the picture, blend raspberries & cherries separately and add layers of white & red to the serving jar. Can use strawberries or cranberries instead of raspberries.
STORAGE : Better served fresh or store in refrigerator for 2 days or in freezer for a week.
