Spicy Mushroom Curry

What's more comforting than a warm spicy curry in these colder months. So here's a fool proof recipe for you to master the art of curry making ;)

Spicy Mushroom Curry

  • Vegan | Nut-Free | Sugar-Free

Prep Time : 15 mins

Cook Time : 20 mins

Total Time : 35 mins

Yield : 3 - 4 servings

INGREDIENTS

1 tbsp Cumins Seeds

1 Cinnamon Stick

2 - 3 Cardamom pods

2-3 Cloves

1 medium Onion

1 tbsp Ginger & Garlic paste

1 tbsp Chilli Powder / Paprika

1/2 tbsp Garam Masala

1/2 tbsp Coriander Powder

1 tbsp Chickpea Flour

1/4 cup Coconut Yogurt

2 Roma Tomatoes

2 cups Mushrooms

Salt

Cilantro

PROCESS

  • In a pan add 2 tbsp of cooking oil, when oil is hot add cumin seeds, cardamom pods, cinnamon stick, cloves and saute for 1-2 mins.

  • Add finely chopped onions and saute till onions turn brown in color.

  • Now reduce the flame and add ginger & garlic paste, chilli powder, garam masala, coriander powder, chickpea flour and saute everything for 2 mins.

  • Now turn off the flame and add yogurt, mix well, turn on the flame again and saute for 1 min.

  • Now add Tomato puree, keep flame on low-medium, cover the pan with lid and cook for 4-5 mins. Stir in between.

  • Add chopped mushrooms, salt as needed, mix well, close the lid and cook for 3-4 mins.

  • Add 1/4 cup water for loose gravy, add cilantro, close the lid and cook for 2 mins on low flame.

  • Turn off the flame and serve warm! Goes well with rice, quinoa and naan!

VARIATION : Add almond/cashew milk instead of water for loose gravy. Use cashew paste instead of yogurt. Can add tofu instead of mushrooms.

STORAGE : Store in an air-tight container in refrigerator for 4-5 days.
