Spicy Peanut Noodles

Spicy Peanut Noodles

Vegan 

Yield : 2-3 servings

Time : 30 mins

INGREDIENTS

  • 1 pack gluten-free Noodles ( soba or udon ) ( 10 oz approx )

  • 3 tbsp Peanut Butter

  • 1 tbsp Soy Sauce

  • 1/2 tbsp lemon Juice

  • 1 tbsp Maple Syrup

  • 1/2 tsp Salt

  • 1/2 tsp Pepper

  • 1 tsp Red Chili Sauce 

  • 2 Garlic Cloves

  • 1/2 inch Ginger

  • 2 tbsp Cooking Oil

  • 2 tbsp crushed roasted Peanuts ( optional )

PROCESS

  • Boil the noodles as instructed on the packaging, drain and keep in cold water.

  • In a medium-size bowl add peanut butter, soy sauce, maple syrup, lemon juice, red chili sauce, salt, pepper and mix well. Keep sauce aside for later use.

  • In a frying pan add cooking oil, when oil is hot add minced garlic, finely chopped ginger and fry for a minute.

  • Add boiled noodles, prepared sauce to the frying pan and mix everything in low flame.

  • Turn off flame and serve warm with crushed roasted peanuts on top!

Notes:

  • Can add veggies along with ginger and garlic before adding noodles. Veggies like mushrooms, broccoli, carrot, peas go well with this recipe. Just let veggies semi cook before adding noodles.

  • Can add one or two finely chopped hot peppers along with ginger & garlic for more spicy flavor.
