Sweet Corn Quinoa Salad

  • Vegan | Gluten-free | Refined Sugar-free

Cook Time : 20 mins

Total Time : 30 mins

Yield : 2 servings


1/4 cup Cooked Quinoa

1/4 cup Sweet Corn Kernels

1/2 Onion

1 medium Tomato

1/4 cup Peanuts

1 Carrot

1/2 Lemon



Chili Powder / Paprika / Pepper


  • Finely Chop Onion, Tomato, Carrot, Cilantro and keep it aside.

  • If you are using raw sweet corn, boil the corn kernels for 10 mins and drain the water. If canned sweet corn kernels are used, skip boiling and just wash the kernels.

  • Boil peanuts for 5 mins and remove skin if needed.

  • Now just add all the ingredients to a mixing bowl and mix well.

  • Serve fresh!

VARIATION : Add any greens of choice if needed. Can also add cooked beans or lentils for extra protein. If allergic to nuts just skip peanuts.

STORAGE : Store in an air-tight container in refrigerator for 2 days.
