Tabbouleh Quinoa Salad

Vegan | Gluten-Free

Yield : 3 servings

Time : 20 mins

INGREDIENTS

  • 1 bunch of Parsley 

  • 4 Mint Leaves

  • 2 Roma Tomatoes

  • 1/2 Red Onion

  • 1/4 cup Cooked Quinoa

  • 1 tsp Cumin Seed Powder

  • 1/2 tsp Pepper 

  • 1/2 tsp Salt ( or as needed )

  • 3 tbsp Lemon Juice

  • 3 tbsp Olive Oil

PROCESS

  • To a mixing bowl add finely chopped Parsley, Tomatoes, Onion, Mint and mix well. To same bowl add cooked quinoa, cumin seed powder, salt, pepper and mix.

  • Add lemon juice & olive oil before serve and mix everything together.

  • Serve as it is as a salad or as a side!

Notes:

  • Add seasoned croutons to add extra crunch.
