Three Non-Alcoholic Summer Drinks

Vegan | Gluten-Free

1. Pink Lemonade

Yield : 2 servings

INGREDIENTS

  • 1/2 cup Raspberries

  • 2-3 Lemons

  • 3-4 Mint Leaves

  • 3 tbsp Simple Syrup

  • Sparkling Water

  • Ice

PROCESS

  • Blend fresh raspberries and strain if needed. Keep fresh raspberry juice aside.

  • In a large glass or shaker, add 3-4 lemon wedges, mint leaves, simple syrup and muddle till all lemon juice is released. Remove lemon wedges to avoid sour taste from skin of lemon.

  • Add ice, sparkling water, raspberry juice to same glass or shaker and mix with spoon. Serve chilled!

  • Add more lemon juice or simple syrup if needed. Adding too much raspberry juice can turn lemonade to red color than pink...so add little by little.

2. Cucumber Ginger Cooler

Yield : 2 servings

INGREDIENTS

  • 1/2 cup Cucumber ( peeled & chopped )

  • 1/2 inch fresh Ginger

  • 3-4 tbsp Simple Syrup

  • Sparkling Water

  • Ice

for rim,

  • Sugar

  • 2 Basil Leaves

PROCESS

  • In a small plate mix sugar and minced basil, keep aside for rim.

  • Add cucumber and ginger to a blender and blend smooth. Strain pulp to get fresh juice.

  • Rim serving glasses with basil sugar and add prepared cucumber juice equally to both glasses. Add ice, simple syrup, sparkling water and mix. 

  • Serve chilled with fresh basil as garnish!

  • To decrease the flavor of cucumber or ginger, muddle cucumber and ginger instead of blend.

3. Spicy Mango Cooler

Yield : 2 servings

INGREDIENTS

  • 3/4 cup Mango ( peeled & chopped, ripe )

  • 1/4 of a Hot Pepper ( or even less if needed )

  • 3-4 Mint Leaves

  • 1/2 tsp grated Ginger

  • 1/2 tbsp lemon Juice

  • 4-5 tbsp Simple Syrup

  • Sparkling Water

  • Ice

for rim, ( optional )

  • Salt

  • Red Chili Powder

PROCESS

  • In a small plate mix salt and chili powder for rim, keep aside. Use sugar for rim if you cannot handle spiciness.

  • In a large glass or shaker add chopped mango, hot pepper ( avoid and use 1/4 tsp chili flakes if needed ), mint leaves, ginger, lemon juice, simple syrup and muddle.

  • Rim serving glasses, add ice, sparkling water and muddled mango mix as needed, add muddled mango mix little at first...taste and add more if needed.

  • Serve chilled!

  • Avoid hot pepper or chili flakes completely for non-spicy version. Or add more simple syrup to adjust spiciness.
