Carrot cake with frosting is made using plant-based ingredients that are readily available at home. The natural sweetness from carrot tastes great with spice blend of ginger, nutmeg and cinnamon. To alternate the conventional cream cheese frosting for carrot cake, we are using Vegan Vanilla Frosting in this recipe.

Possible substitutions

  • Can use wheat flour or gluten-free flours in place of plain flour for this recipe.
  • Can substitute brown sugar with coconut sugar for healthier option.
  • Can replace vegetable oil with coconut oil if you enjoy the flavor of coconut.
  • Can replace walnuts with pecans for seasonal flavor.

Ingredients
  

for Cake ( 6-inch )

  • 1 1/4 cup Plain Flour
  • 1/2 cup White Sugar
  • 1/2 cup Brown Sugar
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/4 tsp Ground Ginger
  • 1/8 tsp Nutmeg
  • 1/2 tsp Salt
  • 1/4 cup Vegetable Oil
  • 1/2 cup Apple Sauce
  • 6 tbsp Milk Almond
  • 1/2 tsp Vanilla Extract
  • 1 1/2 cup grated Carrot
  • 1/4 cup chopped Walnuts

for Vegan Vanilla Frosting

  • 1 1/2 cup Icing Sugar
  • 2 tbsp Vegan Butter
  • 3-4 tbsp Milk Almond
  • 1 1/2 tsp Vanilla Extract

Instructions
 

for Vegan Carrot Cake

  • In a medium sized mixing bowl, add all dry ingredients and mix well. In the same bowl add all wet ingredients and fold to mix. Do not over mix.
  • Transfer prepared cake batter to parchment lined cake pan ( i used 6-inch cake pan ). Bake at 350 F for 35-40 mins or till tooth pick inserted at center of cake comes out clean.
  • Let cake cool completely before adding frosting. In meantime prepare frosting.

for Vegan Vanilla Frosting

  • In a large mixing bowl, add powdered sugar, vegan butter, milk and mix lightly without turning on the hand mixer ( to avoid powder sugar dust all over the kitchen )
  • Beat with hand mixer at medium heat till you get creamy frosting consistency. Add vanilla extract and beat to combine.
  • Add frosting to cooled cake and sprinkle chopped walnuts on top!
