Walnut Vanilla Granola

I can proudly say this is one of the best granola I ever had! The beauty of granola is, you can actually see difference in flavor by adding different nuts. I normally enjoy almond granola and thought that is best of all. But walnut granola is above it. 

And I know walnuts are a bit expensive, as we always say check wholesale shops for nuts and seeds. They have best deals. 

Do you know China is the largest producer of walnuts in the world.

Walnut Vanilla Granola

  • Vegan | Refined-Sugar Free

Prep Time : 5-10 mins

Cook Time : 20-25 mins

Total Time : 25-35 mins

Yield : 3 cups


2 cups Rolled Oats

1/2 cup Walnuts

1/2 cup Pumpkin Seeds

4-5 Pitted Dates

2 tbsp Coconut Oil

1/4 cup Brown Sugar ( any sweetener )

1/2 tsp Vanilla Extract

1/4 cup Dried Cranberries


  • In a food processor or blender add Oats, walnuts, pumpkin seeds, dates and coarse blend.

  • In a separate bowl, melt coconut oil and brown sugar. Add vanilla extract and mix well with a fork or spatula.

  • Add the blended mixture to the bowl and mix everything well. There may be some sugar lumps that will melt in baking.

  • Place the mixture in a baking tray and bake at 350 F for 20-25 mins. Stir in between to avoid burning.

  • Remove from oven, add dried cranberries and mix together.

  • Serve with oatmeal or plant yogurt or plant milk!

VARIATION : Add almonds in the place of walnuts. Add raisins in the place of dried cranberries. Can roast the mixture in pan too. Just roast the mixture at medium flame for 15 mins.

STORAGE : Place in an air-tight container in refrigerator for 2 weeks.
