Add soy milk to a glass or bowl, add apple cider vinegar and mix well. Keep it aside for 2 mins to curdle, this will be vegan buttermilk in our baking process.
To the same glass with soy milk, add other wet ingredients like oil, vanilla extract and mix together.
To a mixing bowl, add all dry ingredients and mix together.
Transfer wet ingredients to dry and mix to combine.
Transfer batter equally to parchment-lined cupcake pan, fill the batter to 3/4th of the cupcake pan ( leave space for the cupcake base to rise ).
Bake at 350F for 20 mins or till the toothpick inserted in the center comes out clean.
Let cool before adding frosting.
Vegan Starwberry Frosting
To a mixing bowl, add vegan butter and whisk for 7-10 mins. Add strawberry compote to butter and whisk to combine.
Add powdered sugar 1 cup at a time and whisk to get buttercream consistency. Chill for 30 mins in the refrigerator before use.
