Cut Roma Tomatoes in half and place on a baking tray. Drizzle olive oil, sprinkle salt and pepper on the tomatoes and bake at 350F for 40 mins, flip tomatoes once in between bake.
In meantime, finely dice onion and mince garlic.
Add olive oil to a cooking pot and let oil heat. Once the oil is hot, add diced onion, minced garlic and saute for 2 mins or till onion turns translucent.
Now, add tomato paste, roasted roma tomatoes, fresh basil, water/broth to the cooking pot and let cook for 5-10 mins on medium flame. Keep stirring in between to avoid any burn at bottom.
Blend using a immersion blender or let cool a bit and blend in a high speed blender.
Add Salt and Pepper as per your preference and serve warm with toasted bread!!
