Add chopped peaches, soy milk, ground ginger, coconut sugar, vanilla extract to a blender and blend smoothly. Keep peach milk aside.
In a bowl add chia seeds, prepared peach milk and mix till no dry chia seeds are found. Cover the bowl with a lid and keep in refrigerator for minimum 1 hour.
Serve with fresh fruits or granola! Add 2-3 tbsp of more soy milk if the consistency of chia pudding is too thick.
