Peel ripe bananas and add to a mixing bowl, mash using a fork or potato masher.
Add sugar, oil, soy milk, vanilla extract to the same bowl with mashed bananas and mix together. ( this is a wet mix )
In a separate bowl, add all-purpose flour, baking soda, and mix. ( this is a dry mix ).
Add dry mix to wet mix and fold in with a spatula. Do not over mix, just mix till no dry flour is seen and no lumps are formed.
Dust chopped walnuts and chocolate chips with flour and fold in the batter. Dusting walnuts and chocolate chips with flour avoid them from sinking down the bread while baking.
Transfer the batter to a parchment-lined loaf tray and spread evenly. Bake at 350F for 60 mins or till a toothpick inserted in the center of the bread comes out clean.
Let the bread cool down for 5 mins in the loaf pan ( 9 by 5 ) before taking it out. Remove bread from the tray and let cool completely on a cooling rack before serve.
Serve warm banana bread with a drizzle of nut butter or maple syrup if needed!
Notes
Add chopped almonds or carob chips in place of walnuts and chocolate chips if needed.
