To a blender, add chopped mango, soy milk, sugar and blend smooth.
Add chia seeds to a medium size mixing bowl and add prepared mango mix. Add vanilla extract if preferred.
Mix well till all chia seeds are immersed in mango mix. Keep aside in cool place for 1 hr or in refrigerator overnight.
If chia pudding is little thick, add 1/4 cup more of soy milk or water and mix well to get pudding consistency.
Serve with fresh mango cubes or other fruit! Coconut cream or yogurt is also great as topping.
Notes
