Pesto Potato Puff Pastry
Easy to make, simple puff pastry with just 3 main ingredients.

Puff Pastry Sheet
Cut Russel Potato lengthwise just like french fries.
Transfer to baking pan, drizzle olive oil, a pinch of salt, and bake sliced potato at 350F for 20 mins.
Defrost or thaw frozen puff pastry sheet in meantime. ( just leave on counter-top for 20-30 mins )
Cut puff pastry sheet to small squares ( approx. to the length of sliced potato ).
Spread a tbsp of pesto on the pastry sheet, place 3-4 bakes potato slices and close the sheet. Repeat for all the sheets.
Wash with soy milk and sprinkle sesame seeds on top.
Bake at 400F for 15-20 mins ( or as directed on the package ).
