Soak cashews and dates in hot water for minimum 1 hour.
Add soaked cashews and dates to a high-speed blender along with water and blend for few minutes ( time depends based on the power of your blender, if using a high-speed blender, it will take 3-5 mins if not it might take more than 5 mins )
Sieve cashew milk if needed and keep it aside.
Whipped Coffee ( Mocha Dalgona )
Add instant coffee, cacao powder, organic sugar, hot water to a medium-sized mixing bowl and whip for 5 mins or till stiff peaks are formed ( this process is faster and easier with an electric hand or stand mixer over manual whisking )
Final Step
Add ice to the serving glass. Fill 3/4 of the glass with prepared cashew milk and top with prepared whipped coffee ( dalgona ). Serve chilled!
