Preheat oven at 350F. Grease 8 by 8 baking pan with cooking oil or vegan butter and line with parchment paper if needed.
In a medium sized mixing bowl, add all dry ingredients and mix well. Keep aside.
In a separate bowl, add all wet ingredients and whisk together to mix. Transfer dry ingredients to wet and fold together using a spatula. Do not knead.
Transfer dough to parchment lined baking pan and bake for 15-20 mins or till corners turn light brown in color.
Let cool completely before adding icing.
to make Icing
Add icing sugar, vanilla extract, almond milk to a mixing bowl and whisk till well combined. Add 1 tbsp more of almond milk if consistency is too thick.
Sprinkle funfetti on top if desired. Let icing set and cut into square shape bars!
