Peel fresh ripe mangoes, remove seed and cut into cubes. Transfer to a blender along with maple syrup or sugar and blend. Keep pulp aside for use in martini.
Skip above step if using store bought sweetened Mango Pulp.
Add mint leaves, lime juice to a shaker and smash to get essence from mint leaves.
Add Mango Pulp, vodka to shaker and shake. Transfer to 3/4 of the serving glass, add club soda and ice before serve!
Garnish with mint leaves or lime wedges if desired!
