Cut bok choy into quarters and keep aside. In a small mixing bowl, add soy sauce, water, corn starch, sugar and mix it. Keep it aside.
In a pot add water and bring to boil. Add chopped bok choy and cook for 2-3 mins with lid closed. Cook till bok choy is fork tender.
In mean time, place a small sauce pan on heat and add 2 tbsp of oil. When oil is hot add minced garlic and cook till garlic turns light brown in color. Add prepared soy sauce mix to sauce pan and cook on low heat for minute. Sauce is ready!
When both bok choy and sauce is ready, place cooked bok choy on a plate and drizzle sauce generously on top.
Storage: better served immediately or can store in refrigerator for 2 days!
