Cook quinoa with a 1:2 ratio of quinoa to water and keep aside.
In the meantime, thinly slice onion, finely diced carrot, beans, and roughly chop cabbage.
In a frying pan, add cooking oil, when oil is hot add cumin seeds, cashew nuts and fry for a second. Keep flame on medium to avoid burning cashew nuts.
Add onion and fry till onions turn translucent.
Now add diced carrot, beans, and fry till both are cooked well. Add cabbage and fry for 2 mins, cabbage cooks faster than carrot and beans.
When all the vegetables are well cooked, add red chili powder, salt, coriander powder, and fry for a minute on low flame.
Add cooked quinoa and mix everything keeping the flame low.
