Vegan Quinoa Fried Rice

This 30-minute Vegan Quinoa Fried Rice is made using all plant-based and gluten-free ingredients with very simple to follow steps. The cooking style used is Indian, so be prepared to experience some spices!

Ingredients to make Quinoa Fried Rice

*If you have gluten intolerance, PLEASE make sure to double-check the ingredients before use.

How to make Vegan Quinoa Fried Rice

  • Cook quinoa with 1:2 ratio of quinoa to water and keep aside. Tip: always cover the pot with lid while cooking quinoa and let the lid be closed for 5 mins after turning off the flame, this makes the quinoa fluffly and tastes lot better.
  • In meantime, thinly slice onion, findely dice carrot, beans and roughtly chop cabbage.
  • In a frying pan, add cooking oil, when oil is hot add cumin seeds, cashew nuts and fry for a second. Keep flame on medium to avoid burning cashew nuts.
  • Add onion and fry till onions turn translucent.
  • Now add diced carrot, beans and fry till both are cooked well. Add cabbage and fry for 2 mins, cabbage cooks faster than carrot and beans.
  • When all the vegetables are well cooked, add red chili powder, salt, corainder powder and fry for a minute on low flame.
  • Add cooked quinoa and mix everything keeping the flame low.
  • Serve hot with side of sliced onion and lime!

Optional add-ons:

  • Add 1 tbsp of raisins at the add with cooked quinoa, if you enjoy sweet and sour mix.
  • Pan fried Tofu as topping.
  • Caramelized onion slices as topping.
  • Roasted Chickpeas for extra crunch.
  • If you enjoy Biryani, add 1 tsp of Biryani Masala to this fried rice alomg with coriander powder, it gives a little essence of biryani.

  • 2 tbsp Cooking Oil
  • 1 tsp Cumin Seeds

  • 1/2 cup Onion sliced
  • 1/4 cup Carrot diced
  • 1/4 cup Green Beans diced
  • 1/4 cup Cabbage chopped
  • 1 1/2 tsp Red Chili Powder or as needed
  • 1 tsp Coriander Powder
  • Salt as needed
