How to make Vegan Pumpkin Chia Seed Pudding

  • In a medium sized mixing bowl, add oat milk, maple syrup, pumpkin puree, vanilla extract and mix till combined.
  • Now add chia seeds, pumpkin pie spice to the same bowl and mix till no dry chia seeds are seen.
  • Cover the bowl and place in the refrigerator for minimum of 30 mins. If you have time, keep in refrigerator for 4 hrs to overnight.
  • Divide between serving bowls and serve with optional toppings like pumpkin seeds, granola, nuts, etc.,.
