If you want to eat warm, soft muffins for breakfast but do not want to eat plain flour or refined sugars, these Healthy Blender Banana Muffins would be your best friend! Made using vegan & gluten-free ingredients, all the equipment you need are a blender and muffin tray!
Ingredients to make Healthy Blender Banana Muffins
- Ripe Banana.
- Peanut Butter.
- Maple Syrup.
- Almond Milk.
- Vanilla Extract.
- Rolled Oats.
- Baking Powder.
- Salt.
- Chocolate Chips
*If you have gluten intolerance, please make sure to double-check the ingredients before use. Gluten intolerance can be deadly to some.
The riper the banana the sweeter it will be, try using bananas that have black spots on them. If you have not very ripe bananas, microwave for 5-10 sec, it will work.
I used crunchy peanut butter for this recipe, use any nut butter of your choice. Make sure to use natural nut butter that has just the nuts as ingredients.
Maple syrup is optional but it does add a little essence to the muffins. If not using maple syrup, replace it with the same amount of almond milk.
How to make Blender Banana Oat Muffins
- Add all the ingredients except chocolate chips to a blender and blend smoothly. Add chocolate chips and mix with a spatula.
- Line a muffin pan with muffin liners and spray with cooking oil to avoid sticking to parchment ( optional if you want to avoid oil )
- Transfer batter equally to muffin tray ( since we are using oats instead of plain flour, there will not be much rise in the muffins, so add 2-3 scoops of batter to each muffin tray section ).
- Sprinkle with extra chocolate chips if needed.
- Bake at 350F for 25-30 mins. Let cool a bit before serve.
- Serve warm!
