Simple, vibrant and delicious chia pudding you ever tasted! Made using healthy plant based ingredients and takes just 1 hour to make. This Mango Chia Pudding dish will always give you summer feels!! Perfect as healthy breakfast or dessert.
What you need to make Mango Chia Pudding..?
I used fresh mango for this recipe as I have them available. If you cannot find fresh mangoes near you, try using mango pulp, highly recommend trying this. Rest of the ingredients are easy to find in any grocers.
- Mango – fresh or pulp. If using pulp, check sweetness before adding more sweetener.
- Chia Seeds.
- Soy Milk – or any other plant milk ( almond, coconut )
- Sugar – or maple syrup. Check sweetness of your mangoes before adding sweetener.
- Vanilla Extract – optional
How to make Mango Chia Pudding..?
- Peel the mango, cut into cubes and keep aside.
- To a blender, add chopped mango, soy milk, sugar and blend smooth.
- If using Mango Pulp instead of fresh mangoes, skip above steps. Just keep 1 1/2 cup of mango pulp aside.
- Add chia seeds to a medium size mixing bowl and add prepared mango mix ( or pulp ). Add vanilla extract if preferred.
- Mix well till all chia seeds are immersed in mango mix. Keep aside in cool place for 1 hr or in refrigerator overnight.
- If chia pudding is little thick, add 1/4 cup more of soy milk or water and mix well to get pudding consistency.
- Serve with fresh mango cubes or other fruit! Coconut cream or yogurt is also great as topping.

- 1/3 cup Chia Seeds
- 3/4 cup Soy Milk
- 2 tbsp Sugar
- 1 tsp Vanilla Extract optional
