Looking for easy, one bowl muffins recipe..? and do it have to be vegan..? Heard that! This blueberry muffins are made using plant based ingredients and easy to follow recipe steps. And one more best thing is, you can substitute blueberry with any other berries and this recipe still works!

What you need to make Vegan Blueberry Muffins?

This recipe calls for simple ingredients that are mostly in your pantry or widely available in any grocers near you. I will link some below that are available online and my favorites too!

How to make Blueberry Muffins?

Step 1: Prepare your ingredients, wash blueberries and keep them aside to dry. Gather other ingredients to make the process even simpler. Line muffin pan with liners and keep aside.

Step 2: Dust dried blueberries with 1 tsp of flour and keep them aside. Add lemon zest to olive oil and let soak to make it even more flavorful.

Step 3: To a wide mouthed mixing bowl add soy milk, olive oil, vanilla extract, sugar and give a good mix to well combine.

Step 4: To same bowl add flour, baking powder and mix everything together. Do not over mix, just mix to combine. Now add flour dusted blueberries and fold them in using a spatula.

Step 5: Now transfer the batter equally to muffin pan and add extra blueberries on top if needed. Bake at 350F for 25-30 mins.

Step 6: Let cool before serve. I sprinkled little brown sugar on top of muffins after bake ( but still hot) to add a little extra sweetness but that is completely optional.

Ingredients
  

  • 2 cups All Purpose Flour
  • 2 tsp Baking Powder
  • 1 cup Soy Milk or any plant milk
  • 1/3 cup Olive Oil
  • 1 tsp Vanilla Extract
  • 1 cup Sugar
  • 1 1/2 cup Blueberries
  • 1 tbsp Lemon Zest optional

Instructions

Notes

Storage: Can store in refrigerator for up to 3 days. Microwave for 30 secs before serve.
