In a cooking pot, add rice, coconut milk, water and cook on medium heat with lid closed for 5-6 mins or till rice is completely cooked. Add 1/4 cup more of water if needed.
Keep cooked coconut rice aside.
Chickpea mix
In a frying pan add cooking oil, when oil is hot, add chopped onions and fry till onions turn translucent.
Add chopped broccoli and fry for 2 mins. Add salt, red chili powder, coriander powder and mix everything.
Add cooked chickpeas, chopped cilantro and cook on low heat for 3-4 mins.
Add chickpea mix on top of cooked coconut rice and serve warm!
Notes
Storage: Can store cooked chickpea mix separately in refrigerator for 3 days. Coconut rice better served in 24hrs after cooking.
