Chickpea Coconut Rice

Quick-to-make Chickpea Coconut Rice that is perfect for meal prep and lunch box. Made using all plant-based and gluten-free recipes, and is packed with a vegan protein source, chickpeas!

What you need to make Chickpea Coconut Rice?

Almost all of the ingredients are healthy and might be readily available in your pantry. To make this even rich, you can add nuts like cashews or peanuts.

If you have uncooked chickpeas, soak chickpeas in water for a minimum of 6 hours and pressure cook with a 1:2 ratio of chickpeas to water for 10 mins. Can pressure cook in Instant Pot or in a conventional pressure cooker. If using cooked, can chickpeas, make sure to get unsalted ones.

How to make Chickpea Coconut Rice?

  • Wash rice 2-3 times with water and keep aside.
  • In a pot add washed rice, coconut milk, water and boil on medium heat. Boil till rice is completely cooked. Add 1/4 cup more of water if needed. Keep cooked rice a side.
  • Finely chop onion, broccoli, cilantro and keep aside.
  • In a frying pan, add cooking oil, when oil is hot add onion and fry for 2 mins or till onions turn translucent.
  • Add chopped broccoli and fry for a minute. Add salt, red chili powder, coriander powder and mix everything.
  • Now add cooked chickpeas, cilantro and cook on low heat for 3-4 minutes.
  • Add chickpea mix on top of cooked coconut rice and serve warm!

Ingredients
  

  • 1 1/2 cup Rice
  • 1 1/2 cup Coconut Milk
  • 1 1/2 cup Water
  • 1 cup Chickpeas cooked
  • 1/2 cup Broccoli chopped
  • 1/2 cup Onion chopped
  • 1/4 cup Cilantro chopped
  • 2 tsp Coriander Powder
  • 1 tsp Red Chili Powder
  • Salt as needed
  • 3 tbsp Cooking Oil

Instructions
 

Coconut Rice

  • Wash rice 2-3 times with water and keep aside.
  • In a cooking pot, add rice, coconut milk, water and cook on medium heat with lid closed for 5-6 mins or till rice is completely cooked. Add 1/4 cup more of water if needed.
  • Keep cooked coconut rice aside.

Chickpea mix

  • In a frying pan add cooking oil, when oil is hot, add chopped onions and fry till onions turn translucent.
  • Add chopped broccoli and fry for 2 mins. Add salt, red chili powder, coriander powder and mix everything.
  • Add cooked chickpeas, chopped cilantro and cook on low heat for 3-4 mins.
  • Add chickpea mix on top of cooked coconut rice and serve warm!

Notes

Storage: Can store cooked chickpea mix separately in refrigerator for 3 days. Coconut rice better served in 24hrs after cooking.
