Vegan Nutella Stuffed Cookies

The best Nutella stuffed Cookies made with vegan and gluten-free ingredients. All the chocolate goodness without any guilt and guess what these cookies are made with oats!!

Ingredients required to make Vegan Nutella Stuffed Cookies

Oat Flour, make your own oat flour at home by just grinding regular rolled oats. I use this handy grinder to make small batches of oat flour when needed. I highly recommend getting this or a similar one if you like making small-batch instant oat flour like me.

Vegan Nutella, even though this is not completely healthy, best to get that chocolate drip. I tried using homemade vegan Nutella, the taste was good but there was no drip as homemade one will harden at room temperature. If you are not vegan then can use regular Nutella too.

PREPARATION

We need to freeze the Nutella before use, not the whole jar, freeze 8-9 tsp (separately) on parchment paper. Let Nutella set completely before use. When cookies are baked, frozen Nutella in the cookies melt and give us that drip. This is a mandatory step.

PROCESS to make Vegan Nutella Stuffed Cookies

  • Add oat flour, salt, baking powder, cacao powder to a bowl and mix to combine.
  • Add oil, maple syrup to the dry ingredients and mix everything to form a dough. Use hands if needed, make sure dough is well mixed.
  • Place the dough in the refrigerator for 10 mins, this step helps to handle the dough while making cookies ( if not dough might be sticky ).
  • Take 2 tbsp of dough and make a round ball. Press dough ball to form a disc. Place 1 tsp of frozen Nutella in between the disc and cover it to form a ball ( by this step you should have a round dough filled with frozen Nutella in the center ). Place in between hands and press with light pressure to get a round cookie shape.
  • Repeat till all the dough is finished.
  • Place cookies on a parchment-lined baking tray and bake at 350F for 10 mins.
  • Let them cool to handle and drizzle melted chocolate on top if desired!

  • Q. Do we need to roast oats before making oat flour?
  • A. No. You don’t need to roast oats before making flour, can use them right from the package. I use this!
  • Q. Can we use homemade chocolate spread instead of store-bought?
  • A. You can but you may not get the drip of chocolate. As homemade solidifies at room temperature.
  • Q. Any replacement for Oat Flour?
  • A. I know oat flour sounds kind of boring for cookies but trust me you will not taste it much, chocolate overpowers the oats! You can replace it with regular flour but then the wet ingredients have to be increased, it will be a whole new recipe.

Notes

Storage: Can store in an air-tight container on counter-top for up to 3-4 days or in the refrigerator for up to a week.
