Cupcake Base

  • 1 & 1/4 cup Flour
  • 3/4 cup Sugar
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 cup Funfetti
  • 1/4 tsp Salt
  • 1/3 cup Coconut Oil
  • 1 cup Coconut Milk
  • 1 tsp Vineger
  • 1 tsp Vanilla Extract

Cupcake Frosting

  • 1/2 cup Vegetable Shortening
  • 1 cup Icing Sugar
  • 1 tsp Vanilla Extract

Cupcake Decor

  • Funfetti
  • Vegan White Chocolate
  • Food Color


  • Mix wet and dry ingredients of cupcake base separately and mix together gradually.
  • Line cupcake pan with cupcake liners and transfer mix to cupcake liners equally.
  • Bake at 350F or 180C for 20 mins or till toothpick inserted comes out clean.
  • Let cool completely before adding frosting.
  • To prepare frosting, add vegetable shortening to a bowl and whisk for 3-4 mins. Add icing sugar and whisk till everything combined well.
  • Add vanilla extract and whisk for a minute. If frosting is too thick, add 1-2 tbsp of coconut milk to get smooth consistency.
  • For heart shaped decor, melt white chocolate, add food color and transfer to heart shaped mold and let cool for 5 mins. Use as desired.
