


Funfetti Cupcakes
Ingredients
Cupcake Base
- 1 & 1/4 cup Flour
- 3/4 cup Sugar
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 cup Funfetti
- 1/4 tsp Salt
- 1/3 cup Coconut Oil
- 1 cup Coconut Milk
- 1 tsp Vineger
- 1 tsp Vanilla Extract
Cupcake Frosting
- 1/2 cup Vegetable Shortening
- 1 cup Icing Sugar
- 1 tsp Vanilla Extract
Cupcake Decor
- Funfetti
- Vegan White Chocolate
- Food Color
Instructions
- Mix wet and dry ingredients of cupcake base separately and mix together gradually.
- Line cupcake pan with cupcake liners and transfer mix to cupcake liners equally.
- Bake at 350F or 180C for 20 mins or till toothpick inserted comes out clean.
- Let cool completely before adding frosting.
- To prepare frosting, add vegetable shortening to a bowl and whisk for 3-4 mins. Add icing sugar and whisk till everything combined well.
- Add vanilla extract and whisk for a minute. If frosting is too thick, add 1-2 tbsp of coconut milk to get smooth consistency.
- For heart shaped decor, melt white chocolate, add food color and transfer to heart shaped mold and let cool for 5 mins. Use as desired.
