Pumpkin Granola

A perfect easy fall breakfast with healthy nuts and seeds that makes your morning meals complete! Easy to make one bowl recipe that can be stored in refrigerator for days.

Dry Ingredients

  • Rolled Oats
  • Buckwheat Grouts ( or puffed quinoa or rice )
  • Pumpkin Seeds
  • Sliced Almonds
  • Salt
  • Ground Cinnamon

Wet Ingredients

  • Pumpkin Puree
  • Maple Syrup
  • Coconut Oil

Pumpkin Granola

Ingredients
  

  • 1 1/2 cup Rolled Oats
  • 1/4 cup Pumpkin Seeds
  • 1/4 cup Sliced Almonds
  • 1/4 cup Buckwheat Groats
  • 1/2 tbsp Ground Cinnamon
  • 1/2 cup Pumpkin Puree
  • 1/4 cup Maple Syrup
  • 1/4 cup Coconut Oil
  • 2 tbsp Raisins optional

Instructions
 

  • Add all dry ingredients to a bowl and mix. Now add all wet ingredients and mix till both wet and dry ingredients are well combined.
  • Transfer the mix to a parchment lined baking tray and spread evenly. Bake at 350F for 30 mins. Flip mix with a spatula in between if needed.
  • Serve on top of oatmeal or yogurt bowls with fresh fruits!

Notes

  • Add raisins to the mix before or after bake for extra sweetness.
  • Can store in an air-tight container in refrigerator for up to 10 days.
