Ingredients To make Vegan Gluten-Free S’mores Cookies
- Cooking Oil.
- Soy Milk.
- Vanilla Extract.
- Brown Sugar.
- White Sugar, organic.
- Oat Flour, gluten-free.
- Baking Soda.
- Salt.
- Dark Chocolate Chips.
- Pecans.
- Vegan Marshmallows.
Cooking Oil: I used vegetable cooking oil in this recipe, you can use canola oil too. I tried using coconut oil but that did not work, so I recommend using vegetable or canola oil for this recipe.
Oat Flour: If you don’t have oat flour at hand, blend rolled oats to fine powder and use.
*If you have gluten intolerance, PLEASE double-check the ingredients before use. Gluten intolerance can be deadly to some.

Step-by-step recipe to make Vegan Gluten-Free S’mores Cookies
- Add all wet ingredients ( oil, milk, vanilla extract, brown sugar, white sugar ) to a mixing bowl and whisk together.
- Follow by adding dry ingredients ( oat flour, salt, baking soda ) to wet ingredients and mix with a spatula till well combined.
- Now fold in chocolate chips, pecans in the dough. Refrigerate dough for 15 mins.
- Take a scoop of cookie dough onto your palm and press lightly to make a disc, place a vegan marshmallow in the center and cover with the dough ( check video recipe attached ). Repeat till all cookie dough is complete.
- Place marshmallow stuffed cookie scoop on a parchment-lined baking tray, leaving a gap in between each scoop, and bake at 350F for 6 mins.
- Remove the baking tray from the oven, top each cookie with more chocolate chips and marshmallows, and bake for another 2 mins.
- Let cookies cool on cooling rack before serve!
Mistakes to Avoid
- Do not forget or skip refrigerating the cookie dough.
- As we are using gluten-free oat flour instead of plain flour, do not mix marshmallows into the cookie dough, if you do so, marshmallows will spread throughout the cookie pan and it is a MESS. Instead, stuff a single mini marshmallow in the center of each cookie scoop, and try not to over stuff.
- Please do not replace Oat flour with gluten-free plain flour, it may or may not work. And trust me, you will not taste any oats in these cookies!
