Vegan Vanilla Cupcakes with Strawberry Frosting

Soft sponge Vanilla Cupcakes frosted with dreamy Strawberry frosting is one of the best vegan cupcakes you will ever have! The soft pink frosting makes these cupcakes look bright and fun. And the combination of vanilla and strawberry gives a very subtle flavor that anyone can enjoy!!

Ingredients to make Vegan Vanilla Cupcakes with Strawberry Frosting

For Vanilla Cupcakes,

  • All-Purpose Flour. In the first place, I am not a big fan of plain flour and replace it with healthy alternatives whenever possible. But when it comes to baking, plain flour is easy to work with and less expensive too, so if you have no dietary restrictions like a gluten-free diet, use plain flour for this recipe. You can try replacing it with gluten-free All-purpose flour, if you try it let me know how it came!
  • Organic Sugar. We are using organic sugar in this recipe to make sure it is vegan, refined sugar has bone char to make it look white in color.
  • Baking Powder.
  • Baking Soda
  • Soy Milk. Whenever I do vegan baking, soy milk is my first choice of plant-based milk. Firstly it is creamy over other milk options, secondly, it has no powerful flavor so it will not affect the taste of the main ingredient.
  • Apple Cider Vinegar.
  • Vegetable Oil. Or any neutral flavor cooking oil.
  • Vanilla Extract.

For Strawberry Frosting,

  • Strawberries. Fresh or Frozen.
  • Organic Powdered Sugar. Again use organic sugar to make sure it’s vegan.
  • Vegan Butter. I used Earth Balance sticks.

How to make Vegan Cupcakes?

To make Vanilla Cupcakes,

  • Add soy milk to a glass or bowl, add apple cider vinegar and mix well. Keep it aside for 2 mins to curdle, this will be vegan buttermilk in our baking process.
  • To the same glass with soy milk, add other wet ingredients like oil, vanilla extract and mix together.
  • To a mixing bowl, add all dry ingredients and mix together.
  • Transfer wet ingredients to dry and mix to combine.
  • Transfer batter equally to parchment-lined cupcake pan, fill the batter to 3/4th of the cupcake pan ( leave space for the cupcake base to rise ).
  • Bake at 350F for 20 mins or till the toothpick inserted in the center comes out clean.
  • Let cool before adding frosting.

To make Vegan Strawberry Frosting,

  • Add fresh or frozen strawberries to a saucepan along with 2 tbsp of sugar and simmer for 5 mins on low flame. Mash strawberries with a fork in between. Turn off heat and when the mix is cool to handle, blend it to a puree using a hand blender or regular blender. This is Strawberry Compote.
  • To a mixing bowl, add vegan butter and whisk for 7-10 mins. Add strawberry compote to butter and whisk to combine.
  • Add powdered sugar 1 cup at a time and whisk to get buttercream consistency. Chill for 30 mins in the refrigerator before use.

How to increase Strawberry Flavor in Vegan Cupcakes?

1 tsp of Strawberry Extract can be used in the cupcake base for more strawberry flavor.

  • 1/2 cup Vegan Butter
  • 4 cups Powdered Sugar organic
