Biscoff Glazed Oatmeal ✨✨

For 1 serving,
1/4 cup oats
1/2 a banana
3/4 cup soy milk
1/2 tbsp flaxseed meal

For glaze,
Mix biscoff spread with soy yogurt.
.
Prepare oatmeal by adding all ingredients except glaze ingredients to a pot and cook on medium flame for 5 mins.

Transfer to a bowl and keep in refrigerator to cool.
.
Top with biscoff glaze before serving!!

Mostly like a dessert for breakfast!! Can substitute biscoff spread with nut butter for healthier version!!

Quinoa Fried Rice - Indian Style✨✨

one of the constant in our home! made using plant-based ingredients.
.
1/2 cup Quinoa uncooked
2 tbsp Cooking Oil
1 tsp Cumin Seeds
2 tbsp Cashew Nuts
1/2 cup Onion sliced
1/4 cup Carrot diced
1/4 cup Green Beans diced
1/4 cup Cabbage chopped
1 1/2 tsp Red Chili Powder or as needed
1 tsp Coriander Powder
Salt as needed

Cook quinoa with a 1:2 ratio of quinoa to water and keep aside.
.
In the meantime, thinly slice onion, finely diced carrot, beans, and roughly chop cabbage.
.
In a frying pan, add cooking oil, when oil is hot add cumin seeds, cashew nuts and fry for a second. Keep flame on medium to avoid burning cashew nuts.
.
Add onion and fry till onions turn translucent.
.
Now add diced carrot, beans, and fry till both are cooked well. Add cabbage and fry for 2 mins, cabbage cooks faster than carrot and beans.
.
When all the vegetables are well cooked, add red chili powder, salt, coriander powder, and fry for a minute on low flame.
.
Add cooked quinoa and mix everything keeping the flame low.
.
Serve hot with a side of sliced onion and lime!
