There are so many different fillings that can be used in puff pastry, I wanted to use my two favorite foods for this one. If you are like me, you would definitely love this Pesto Potato Puff Pastry that is so easy to make with just 3 main ingredients!
Ingredients to make Pesto Potato Puff Pastry
If you are vegetarian, use any store-bought puff pastry dough, if vegan, make sure to check if the dough is vegan. Attached below is the vegan puff pastry dough I used, it works great all the time.
- Vegan Puff Pastry Sheets
- Russel Potato.
- Basil Pesto, store-bought or homemade.
- Soy milk, to rub on top before bake.
- Sesame Seeds (optional).
*If you have gluten intolerance, please make sure to double-check the ingredients before use. Gluten-intolerance can be deadly to some.
How to make it?
- Cut Russel Potato lengthwise just like french fries.
- Transfer to baking pan, drizzle olive oil, a pinch of salt, and bake sliced potato at 350F for 20 mins.
- Defrost or thaw frozen puff pastry sheet in meantime. ( just leave on counter-top for 20-30 mins )
- Cut puff pastry sheet to small squares ( approx. to the length of sliced potato ).
- Spread a tbsp of pesto on the pastry sheet, place 3-4 bakes potato slices and close the sheet.
- Wash with soy milk and sprinkle sesame seeds on top.
- Bake at 400F for 15-20 mins ( or as directed on the package ).
- Serve warm!
